The standard
In a room at this level, a guest should never have to say it twice.
The best dining rooms have always run on memory. One maître d' who knows that the gentleman at Table 22 cannot have shellfish, that his wife prefers white Burgundy, and that tonight is an anniversary. That knowledge is the service. It also leaves the building when that person does.

Held per person and confirmed again on each visit. Printed on every ticket for that seat, and checked against each dish as it is ordered.
A wine taste profile
Built from what each guest has ordered. It appears only once there is enough history to mean something.
Regulars and occasions
Returning guests, favourite dishes, the pace they like, and the anniversaries and birthdays noted on the booking.
The live floor
Every table by course and by time seated, with markers for allergies, occasions and guests who need a question asked.
What to sell tonight
Dishes and bottles the kitchen and cellar want to move, with the margin behind each. Staff see this. Guests never do.
